Üretim ve tüketimin yerellikten çıkması ve küresel ölçüde ticaretin gelişmesiyle birlikte tedarik zincirleri eskisinden daha uzun ve karmaşık yapılara dönüşmüştür. Özellikle de süt ve süt ürünleri gibi raf ömrü kısa olan ve bu yüzden üreticiden tüketiciye çok hızlı ve uygun koşullarda ulaştırılması gereken gıda ürünlerinin tedarik zincirlerini verimli yönetmenin önemi daha da artmaktadır. Bu çalışmada, Covid-19 salgını sonrası süt ve süt ürünleri tedarik zincirinde verimliliği etkileyen faktörlerin incelenmesi amaçlanmaktadır. Çalışmanın kapsamı Konya ili dahilinde süt ve süt ürünleri üreticisi firmalar olarak belirlenmiş olup, anket tekniği ile 30 firmadan bu kapsamda bilgi toplanmıştır. Anket dahilinde hazırlanmış olan sorularla, süt ve süt ürünleri üreticilerinin, tedarik zincirinin verimliliğine dair görüşleri toplanarak analiz edilmiştir. Araştırma sonuçlarına göre sırasıyla, Uzun tesis duruş süreleri; Ürün talebinin isabetli olarak tahmin edilememesi; Lojistik maliyetlerindeki yüksek artış; Personel bilgi yetersizliği ve Yüksek üretim maliyetleri Covid-19 salgını sonrası verimliliği önemli ölçüde etkileyen faktörler olarak belirlenmiştir. Buna ek olarak Covid-19 sonrası dönemde, Covid-19 öncesi döneme göre etkisi en fazla artan faktörler sırasıyla, Yüksek lojistik maliyetleri, Nihai ürün talebindeki dalgalanmalar ve Yüksek üretim maliyetleri olarak bulunmuştur. Bu çalışma ile, sektördeki işletmelerin verimliliklerine katkıda bulunmak, Covid-19 salgını sonrası işletmeleri olumsuz etkileyen faktörleri belirleyerek, işletme yöneticilerinin tedarik zincirlerini geliştirmek için alacakları kararlara yardımcı olmak amaçlanmıştır.

With the decentralization of production and consumption, and the development of global trade; supply chains have become longer and more complex structures than before. It has become even more important to manage supply chains efficiently for food products such as milk and dairy products, which have a short shelf life and therefore need to be delivered very quickly under favorable conditions from the producer to the consumer. This study aims to examine the factors affecting efficiency in the supply chain of milk and dairy products after the Covid-19 outbreak. The scope of the study was determined as milk and dairy products producer companies in Konya province. Information was collected from 30 producers through a questionnaire survey. By this way, the opinions of milk and dairy producers on the efficiency of the supply chain were collected and analyzed. According to the results of the research, Long facility downtimes; Inability to accurately forecast product demand; Sharp increase in logistics costs; Insufficient personnel knowledge and High production costs were determined as factors that significantly affect efficiency after the Covid-19 outbreak. In addition, it was determined that the factors whose effect increased the most in the post-Covid-19 period compared to the pre-Covid-19 period were the High logistics costs; Fluctuations in final product demand; and High production costs, respectively. With this study, it is aimed to contribute to the productivity of the enterprises in the sector, to determine the factors that negatively affect the manufacturing enterprises after the Covid-19 outbreak and to help managers of these firms make decisions to improve their supply chains.
